Ingredienser:<\/p>\n

650 ml \u00f8l (vi brugte en APA)<\/p>\n

150ml surdej (vi brugte \u00e6ble-surdej)<\/p>\n

50g solsikke kerner<\/p>\n

5g g\u00e6r<\/p>\n

400g \u00f8ko hvedemel<\/p>\n

200g \u00f8ko durummel<\/p>\n

200g \u00f8ko \u00f8landshvedemel<\/p>\n

Bland det hele p\u00e5 fuld skrue med en r\u00f8remaskine (tager ca 20-35min) indtil dejen slipper sk\u00e5len og tr\u00e6kker elastiske tr\u00e5de (gluten pr\u00f8ven).<\/p>\n

Stil dejen overd\u00e6kket p\u00e5 bordet i 2 timer. S\u00e6t herefter dejen i k\u00f8leskabet natten over.<\/p>\n

Varm ovnen godt op (p\u00e5 max). Brug en st\u00e5l-bageplade eller evt en alm bageplade vendt p\u00e5 hovedet. (Vi brugte pladen fra @diablosteel ?). Det taget ca 45min f\u00f8r ovnen er godt varm.<\/p>\n

I mellemtiden l\u00e6gges dejen forsigtigt ud p\u00e5 et meld\u00e6kket bord (vi bruger altid en grovere mel-type til dette). L\u00e6g boller p\u00e5 bagepapir eller direkte p\u00e5 pladen og bag til de er gyldenbrune!<\/p>\n
